Only on your iPhone. moa's server does not keep recordings (it only passes one along to the transcription service when live transcription was not possible). You can listen again from the meeting screen, and deleting a meeting deletes its recording.

On your iPhone, go to Settings → Apple Account → Subscriptions, choose moa and cancel. You keep access until the end of the current period. The app's Settings → Plan → Manage Subscription opens the same screen.
In the app: Settings → Account → Delete Account. Everything on the server is deleted at once. Meetings on your iPhone go when you delete them in the app or delete the app.

Recording a conversation you take part in is allowed in most places, but some countries and regions require the other people's consent. Telling them first and getting their consent is the safe way.
